Garlic shrimp in coconut milk

When I was buying groceries for that hummus pasta, for some reason I bought two pints of grape tomatoes, even though I only needed one for the pasta. And since I only used up half of my can of coconut milk, and I also had two green onions sitting in my fridge, I figured this was a good opportunity to make garlic shrimp in coconut milk and tomatoes.

I've actually made this recipe several times in the past, and I've always really liked it, but I guess I haven't written a single blog post about it. Until now.

So, this recipe calls for a can of diced tomatoes, not a pint of grape tomatoes, but I figured this was an okay enough substitution. It also calls for a whole can of coconut milk, not a half one, but the whole point of this is for me to just use up what I have. I really just needed to buy a single bell pepper and some shrimp. Oh and cilantro. I always need cilantro.

I was able to get the bell pepper from Giant Eagle, but when I walked over to the seafood section, I looked at the shrimp, and it was $13.99 a pound! That's insane! And the recipe calls for a pound and a half. I wasn't going to pay $21 for shrimp. Aldi sells shrimp. I'll just get it from there.

Unfortunately, Aldi ended up being out of raw shrimp, and they only had bags of cooked shrimp left. I'm pretty sure I have an old blog post about why I should never buy already cooked shrimp. But I didn't want to walk back to Giant Eagle just for the shrimp, and this bag was only like $7. So I bought it.

Terrible decision. Never never never buy already cooked shrimp. It was way too tough and didn't have enough flavor.

So, I made way too many deviations from the original recipe, and this turned out...not as good as it normally does, but it wasn't terrible! I still ate all the leftovers.


Chicken tikka masala

I know, it's been over a month since I last posted. I'm still cooking. I cook a few times a week, and most of those times I'm really happy with what I cook, but when I'm done cooking my food, I just want to eat it and not have to take photos of it. I really don't like taking photos of food, and lately I haven't had anyone else taking the photos for me, so it's hard. When my sister was living with me it worked out really well because she would plate the food really nicely and take all the photos and she really liked doing that.

Anyway, I made Chicken Tikka Masala because I had half a cup of heavy cream, and I needed a break from pasta. I had no intention of taking a photo of it and posting it on the food blog. But today, in the midst of the incredibly rainy and cloudy past few weeks, a glimmer of sun came out. I was just finished cooking and I thought "ooh! I have natural light!" I usually cook after work when it's already dark, and the photos with the kitchen and living room lights on just aren't that great. So I had to take this opportunity.

I had intended to eat this with just a piece of naan, so I initially didn't cook any rice. But once I decided I was going to take a photo, I also decided that I needed rice for the aesthetic. (Don't worry, I still ate it)

And no, I didn't make the naan. I just bought it from Aldi. Normally I would say something about how dough scares me, but I've actually made naan before! And it was good! But I was not feeling up for making both tikka masala and naan bread on the same day.

So, after I start the rice cooker, I drag my table all the way across the living room so the light is hitting it juuuust right. Or at least better than how the lighting is where it normally is. And then I think, it's finally sunny out! I should take a walk after I finish eating!

Well, it's a good thing I managed to take the photo when I did. It started raining again once I finished eating, so unfortunately that means no walk ):

But the chicken tikka masala was very good. Very happy I made that, and also happy that I have two photos to show for it.

Seafood Blend: Part 1

I just happened to be at Trader Joe's the other day, and I remembered a Budget Bytes recipe that I really wanted to try: Seafood Rice Skillet. Now this recipe calls for some sort of seafood mix, but Beth used the one in Trader Joes so I figured, why not.

Note to self: never buy Trader Joe's Seafood Blend again. It is tasteless.

I followed the recipe exactly, and the end result was a really beautiful dish. I think it needs some adjustments though:

  • Double the seafood. There is a lot of rice in this, and not enough seafood.
  • Cook the seafood first, and mix that in with the rice at the end. I always find cooking seafood with other things to be kind of tricky, but if I cook it by itself then I can get it to just the right amount of done-ness.
  • Fewer peas. There were also too many peas for my liking, but let's be honest, the next time I use frozen peas in a dish, I'm not going to bother actually measuring them.

Oh, and I also replaced parsley with cilantro. Because parsley smells weird and cilantro makes everything better.
